Hi! I’m Angela from over at Craving Cupcakes. I’m always excited to do a guest post for Mel, and this one just happens to be during a very exciting week for her. I really wish that Mel and I lived closer so that I could have helped her out with this cookie contest.
I’m a nanny. Back in August, I finished working with one of my favorite families; one that I had been with for five years. Just this past weekend, I had arranged for one of the girls to come over to spend a few hours with me. She’s always loved baking with me, so I figured the perfect project would be making some whoopie pies out of a new cookbook that I got for my birthday. It was a fun project, but we were so distracted from all of our chatting that I ended up making the whoopie pies much too large, and I didn’t get nearly enough pictures. I was perfectly ok with this though, because the memories we made that afternoon were priceless. I definitely recommend grabbing your favorite child and getting them to help you out with this one!

Vanilla Root Beer Whoopie Pies

Vanilla Whoopie
- 2 1/4 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 4 tbsp room temperature butter
- 4 tbsp vegetable shortening
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 1/2 cup buttermilk
- 2 tbsp milk
- 1 tsp baking soda
- 1 tsp vinegar
- 1 tsp vanilla extract
1. Preheat oven to 375F. Line a cookie sheet with parchment paper.
2. Whisk together flour, baking powder and salt in a medium bowl.
3. In a large bowl, beat together butter, shortening, sugar and brown sugar until creamy. Add eggs and buttermilk, beating until combined.
4. In a measuring cup, stir together milk, vinegar and baking soda. Add this milk mixture to the batter, and fold in the flour mixture.
5. Drop batter onto cookie sheets by the tablespoonful, and bake for 10 minutes.

Root Beer Buttercream
- 3 cups icing sugar
- 1/2 cup room temperature butter
- 4 tbsp heavy cream
- 1 tsp root beer extract
- pinch of salt
Beat together sugar and butter until crumbly. Add the cream, vanilla and salt, beating until smooth.
To assemble whoopie pies, spread frosting on one side of a cookie, then sandwich another cookie on top. Enjoy!

I think that's really cool that you hung out with your former charge; that must have been a really fun day. :) I've never even heard of whoopie pies before; hmmmm! You def. can't go wrong with root beer!
